The Steve Costi Seafood's day starts 4 a.m. over strong coffee at the Sydney Fish Market. Steve Costi chairs a meeting of his buying team as they peruse manifests of seafood that have arrived through the night by plane and truck from seafood suppliers from all over Australia and New Zealand. Export orders from Europe & Asia are considered before the buyer's head to the auction floor to identify the best seafood supplied to auction, from up and down the NSW coast. All seafood bought then goes through a final inspection for quality and freshness, before entering the Steve Costi supply chain.

This is a lifestyle that is well known to Steve, having been first brought to the old Sydney Fish Market by his father as a 5 year old, who had opened a seafood shop at Lakemba in 1960. Steve's father had migrated from Cyprus in the '50s, one of seven brothers, many of whom were involved in the seafood trade. When Steve left school he went straight to work in his brother George and uncle Harry's seafood business. The years spent with them completing his seafood education. In 1985 Steve was approached by David Jones, who were in the final stages of development of a brand new food hall situated in their Market Street store. The resulting store redefined seafood retailing in this country and set new bench marks in quality, service and variety.
